HATE dry bird.

Only having 7 for dinner thus far. I can do 12 sitdown or 20 buffet. My sons mother(my best friend), son, daughter-in-law, grandson and x husband are coming into town. Kevin only gets to see the grandson once or twice a year so that will be special. The guest rooms will be full, it will be like Currier and Ives holiday minus the snow. Of course we are not the "normal" nuclear family.

The menu:

snacks: Deer bologna (my son is a hunter, hate the stuff) shrimp, crab puffs, cheese ball and crackers.

dinner: The Bird, ham, oyster dressing, mashed potatoes, sweet potatoes, gravy, green beans, tossed salad, rolls, corn bread, pumpkin and pecan pies.

Never understood oyster dressing since i saw it on the Lucy Show when i was a kid i think Viv had the oyster dressing and the white Christmas tree Lucy had traditional dressing and a green tree. They got into a fight and ripped the turkeys and trees apart then they heard the kids caroling and were filled with remorse and tied what was left back together.
Okay back to topic...where did that smilie go?

I tried to hire 2 caterers but both were booked for the holiday.

Try injecting it before you fry it,but before let is baste in a pan with the same stuff you inject it with.I would beging your baste late the night before.Maybe even get up like 2 or 3 am and baste it.That way it does not get too mushy.Even if it does get a nit mushy when you fry it the mushiness will go away.

I am taking James advice and doing the bird in a crock pot. Went to Walmart this morning and purchased a big one. Believe it our not mine is over 30 years old, ugly avacado green but still works. Can you say flash back to the 70's? It was my mothers. Upgraded to a stainless one.

It sounds like quite the feast. I think that Ozzie and Harriet would be happy to have such a loving and tight knit family, regardless of whether it is considered typical or not. It sounds like you have been really blessed.

And, nope, no turkey gravy here. I never was really fond of gravy, either. All of this has its perks for me, though. My husband is an excellent cook, better than I am by quite a bit when he puts his hands to it. So there is all that delicious home cooked food and I don't have to lift a finger until after dinner. Honestly, it's a nice treat for once a year.

Aquarius-

He makes you do the dishes? I do the pots, pans as I go and then dump it all in the dishwasher.

My favorite part is making TV dinners to freeze after the feast. I seldom have a lot of dressing left over. My son and x can literally eat a whole pan full.

Love a good turkey dinner mid January.

Sorry to hear you are alone, you cant get a dinner invite off a friend.

Years ago Kevin and I would go to a homeless shelter and serve dinner and then eat with them. Perhaps you might want to do that. Its good to give back to the community.
