Friendship and Advice Wanted Please.

Recipes for Fund Raising

Hi guys,

I am asking you all to share your tray bake recipes with me as I am hoping to bake for a craft fair to try and raise funds for my PP on death row. He is desperate for a TV and is going stir crazy after being incarcerated for 19 years already. I want to bake for an indoor market stall once a week, so all ideas are truly welcome.

Also anyone with interesting recipes for preserves/ jelly and chutney. I have an apple tree in the garden and a gooseberry bush and lots of the lovely elderflower shrubs around the fields. Tips please.

    I am sorry but i have no recipes to share with you, baking etc is not my forte! Good luck though with your fund raising, thats a great thing you are doing :0)

    Good luck to you. This is a great idea and he'll have his TV in no time! I don't cook so I can't contribute to the recipes unfortunately.

    Ingredients
    225g/8oz onions, coarsely chopped

    900g/2lb apples, peeled, cored and chopped. Hard apples, such as Grannie Smith, work best, but any under-ripe apples are fine, or you can use green tomatoes or tamarillos

    110g/4oz sultanas, raisins or chopped dates or died figs

    15g/½oz ground coriander seed

    15g/½oz turmeric powder

    15g/½oz hot paprika (or half the quantity of cayenne)

    15g/½oz mixed spice

    15g/½oz salt

    340g/12oz brown sugar

    425ml/¾ pints vinegar (cider vinegar is best for this)

    Preparation method
    1.Put all the ingredients into a preserving pan. Let stand overnight.
    Next day, slowly bring to the boil.

    2.Simmer for 1½-2 hours, stirring from time to time to stop the chutney sticking to the pan.

    3.When it is very thick and you can draw a wooden spoon across the base of the pan so that it leaves a channel behind it that does not immediately fill with liquid, the chutney is ready.

    4.Turn into sterilised jars, seal and cool.

    Silas, thank you so much hunnie. I have two apple trees in the garden too, so I can use the windfalls and make huge quantities of this chutney. You are an angel. xx

    Windfall are perfect, even if they're a little bit bird-pecked. If they are very young, and the seeds have not coloured, you can omit the peeling and coring. Just wash, remove any stems, and chop.

    Raspberry Jalapeno Jelly

    3 or 4 jalepeno peppers (leave seeds in and dice small)
    1 md red bell pepper (diced small)
    1 md green bell pepper (diced small)
    6 c sugar
    1 1/2 c apple cider vinegar
    1 tsp red pepper flakes
    2 pouches liquid pectin (certo)
    1 1/2 c raspberries

    1. In a large pan bring sugar and vinegar to a boil.
    Stir in diced peppers and red pepper flakes. Boil and stir for 5 minutes.
    Remove from heat.
    Stir in pectin and raspberries.
    place back on heat and bring back to a rolling boil.
    Boil and stir for 5 minutes.
    2. Remove from heat and fill hot jars 1/4 inch from top. put on hot lid
    Hot water bath for 10 minutes.

    Its great served with cream cheese and crackers. (I like "flips" myself).

    I have a special Hotty just for Beef and Pork Roasts..
    Jezabel Sauce...
    18 oz jar pineapple preserves
    18 oz jar apple jelly
    1 small can dry mustard
    1 small jar horseradish
    1 Tbsp cracked pepper
    Combine all ingredients; blend well. Put in jelly jars and refrigerate. This will keep indefinitely!
    Note: I have substituted other preserves/jellies, like peach and others, but apple should stay!
